
In recent years, concerns have
emerged regarding the overall nutritional content of school meals.
On June 13, 1995, the USDA released the new regulations governing
the National School Lunch and School Breakfast programs. The
regulations are part of USDA's comprehensive plan for promoting
the health of the nation's school children by updating the nutrition
standards for school meals and providing the state agencies and
school districts the tools to meet these standards. These
new regulations became effective for the 1996-1997 school year.
The New Regulations
Include:
1. Requiring compliance
with dietary guidelines for Americans by 1996-1997 school year.
2. Changing age/grade grouping
for nutrition standards.
3. Renaming the bread/bread
alternative component to grain/breads. Increasing the vegetable/fruit
and bread/grain quantities.
4. Offering three options
for planning and preparing meals: Food-Based Menu Planning,
Nutrient Standard Menu Planning and Assisted Nutrient Standard Menu
Planning.
5. Extended the Coordinated
Review Effort (CRE) review from four to five years.
The three menu choices serve
as a method to implement the Dietary Guideline goals as well as
meet the Recommended Dietary Allowances and calorie needs.
The choice of which system to use is up to each school food authority.
Our choice at Goose Creek C.I.S.D. is that of the NuMenu.
All of our reimbursable menus are analyzed for their nutrient content
and a copy of this is kept in our office and made available to each
campus.
NuMenu requirements deal with
menu items instead of food components and food items. A Menu
item may be any single food or combination of foods.
Meals are required to have three menu items for lunch and for breakfast.
There are three categories of menu items: Entree, Side
Dish and Milk. Using offer verses serve students may have
a maximum of Five items on their tray (one must be an entree) and
a minimum of Three.
